Smoked Salmon, Lemon & Caper Pasta

My boyfriend bought a copy of Waitrose Weekend free newspaper home and we had a flick through the colourful spring recipes featured in the ‘meals in minutes’ section. We  were looking for something super simple to cook when we were both feeling too tired to spend hours in the kitchen. We picked up all of the ingredients for this recipe in Worcester Waitrose. Despite being extremely simple, this quick pasta dish was utterly delicious!

The recipe serves 2

Ingredients

150g pappardelle pasta (found in the dried pasta aisle)
1 tbsp extra virgin olive oil
Zest and juice ½ lemon
1 tsp Dijon mustard
150g pack Waitrose Hot Smoked Scottish Salmon Slices, flaked (found in the fresh fish aisle)
4 salad onions, sliced
1 tbsp capers, drained, rinsed and chopped
1 tbsp chopped dill

Method

  1. Cook the pasta in boiling water for 4 minutes, drain and return to the pan.
  2. Meanwhile, whisk together the oil, lemon zest and juice and the Dijon. Stir into the pasta together with the salmon, salad onions, capers and dill. Season and serve.
