Tell me a little bit about how you came to own or work in your business?

As far as I remember, my family has always been worked in hospitality and the food industry, and so I followed the pattern.

Before I started my chocolate venture, I had worked in some of Cotswolds finest hotels as a pastry chef. After having our first child, I realised that spending 14-16 hours in the kitchen would mean missing too much of  time with my family, so I decided to put my skills and knowledge towards my passion for chocolate.

What achievements, awards or accolades are you proud of?

My time working in 3 rosette kitchens is definitely something to be proud of.

I am also proud to have won the Von Essen Ice Cream competition with my ‘Rhubarb Crumble Ice Cream’.

Any news announcements, or events that you’d like new and existing customers to be aware of?

Due to the current climate it’s hard to plan ahead. I am working on my Winter / Christmas collection so some very exciting times ahead! I am also developing a new range of vegan chocolate.

What makes your business unique?

I believe that the style of my chocolate is quite unique. The colours and shapes compliment the taste of all my creations!

My newest addition ‘MOOD SHOTS’ is definitely something I haven’t seen anywhere before.

The fact that we can personalise your chocolates with colours and flavours, makes things extra interesting.

Favourite restaurant to visit if you get a night off?

I do love my local pub ‘Round of Grass’ in Badsey and the ‘Noel Arms Hotel’ in Chipping Campden.

Last thing you watched on TV?

Catching up with Homeland, and Six Nations Games.

Which person in your life do you most admire and why?

Tricky question, but that would be my wife. She is always there when I need her.

Most importantly, she is my ‘Chief Taster’! I wouldn’t be able to design any collection without her harsh but constructive opinion.

What was the last gift you gave someone?

That would be CHOCOLATES!

What’s your favourite smell in the whole world?

Good home cooking from my Mum…… and then caramel and vanilla.

What’s your favourite kind of sandwich?

My absolute favourite is a French Croque Monsieur.

Who would you want to cook your last meal on earth, and why?

My wife – traditional home cooking made with love!

What is the most annoying habit that other people have?

I do hate when people are late!

If you could eat only 3 foods for the rest of your life, what would they be?

Pasta, BBQ Ribs and chocolate of course.

What’s your claim to fame?

Not sure yet!

Which food & drink business (other than your own) do you wish you had created?

McDonalds – amazing set up, and an almost perfect business model.

What is the best piece of advice you’ve ever received?

‘Overnight success takes about 4 years to happen’.

If you could be anywhere else right now, where would it be?

Fiji- my dream holiday.

What’s the best thing that happened to you last week?

I have developed  a new Christmas Afternoon Tea for one of the Cotswolds hotels.

Name a product or service you love so much that you’d happily be that company’s spokesperson.

Valhrona – French brand of premium chocolate. I absolutely love their chocolate, they have an amazing product.

As a child, what did you wish to become when you grew up?

Bin man. I was always amazed of those big lorries with countless number of buttons?

Then, I kind of knew I will become a chef at some point.

What is the perfect combination of pizza toppings?

BBQ chicken, red onion, sweetcorn and double cheese.

What was the worst job you ever held and why?

Never held a job which I hated.

I do believe, if you don’t like what you are doing, then don’t do it!!!

Favourite band?

Queen

What was the last thing you ate?

Cottage cheese and avocado on toast.

Favourite cut of steak?

I do like a good ribeye.

What is the most impressive thing you know how to do?

Professionally – Chocolate Show Pieces, That is a very pretty special thing.
