Leading up to Christmas this year, I have been trying to take care of my body a little better and have adopted a temporary change in diet (I’ll explain more about in a separate post). As part of the 4 week ‘detox’ I’d made the decision to exclude wheat, alcohol, chocolate, dairy and red meat from my diet. One of the challenges was to incorporate enough variety of recipes into my new routine to help keep things interesting and to minimise boredom. As someone who doesn’t like bananas at all, this was an unusual choice of recipe to include in my plan, but in fact I really enjoy these pancakes – bananas ‘n’ all. The best thing about these quick & healthy blueberry and banana pancakes is that you only need 4 simple ingredients to put them together.

The recipe serve 1 (makes 4 pancakes)

Ingredients

1 large ripe banana

2 medium egg

75g fresh blueberries

1 tsp vanilla extract

Oil spray

Method

  1. Peel the banana and mash it until smooth in a bowl
  2. Mix in the eggs and vanilla extract
  3. Heat a large non stick frying pan on a medium heat and spray with cooking oil (I use coconut oil)
  4. Scoop 3 tablespoons of the pancake mixture (per pancake) into the frying pan and cook for 2-3 minutes
  5. Whilst the pancakes are cooking, sprinkle a few blueberries on top of the pancake mixture, press down gently with a metal spatula and then flip
  6. Cook the pancakes on the flipped side for a further 1-2 minutes and serve
