I haven’t made anything with pork yet to include on my blog. Come to think of it I don’t remember the last time I cooked with pork. This recipe caught my eye on the Taste of Home website because it sounded simple, healthy and the main ingredient is pork! Here it is…
The recipe serves 2
Ingredients
300-340g pork tenderloin
1 tsp coarsely ground pepper
1/4 tsp salt
1 tsp olive oil
90g uncooked orzo pasta (I found mine in the Deli, Pershore)
100-200g fresh baby spinach
100g cherry or plum tomatoes
50g crumbled feta cheese
Method
- Rub the pork with the pepper, cut into 1 inch cubes. In a large non stick frying pan, heat the oil over a medium heat. Add the pork, cook and stir for 8-10 minutes or until the meat is no longer pink
- Meanwhile bring a large pan of salted water to the boil. Stir in the orzo and salt and cook uncovered for 8-9 minutes. Stir in the spinach and cook for a further 45-60 seconds until the orzo is tender and spinach has wilted. Drain.
- Add the tomatoes to the pork, heat through and stir in the orzo mixture and crumbled cheese.
