Super Healthy Salmon Burgers

I like to try and cook something with salmon every week so had a look on the BBC Good Food website for some inspiration and found this recipe for Super Healthy Salmon Burgers. They really are super healthy and low calories so although the recipe said it served 4, I made 2 burgers for each of us and served them with some rice and salad. You will need a food processor.

The recipe serves 2

Ingredients

4 boneless, skinless salmon fillets cut into chunks

2 tbsp. Thai red curry paste

thumb-size piece of fresh root ginger, grated

1 tsp soy sauce

1/2 bunch coriander, leaves chopped

1 tsp vegetable oil

Lemon wedges, to serve

Salad (I used pre packed from supermarket)

1 packet microwave basmati rice (I’ve used Tilda white basmati)

Method

  1. Tip the salmon into a food processor with the paste, ginger, soy and chopped coriander. Pulse until roughly minced. Tip out the mixture and shape into 4 burgers. The mixture is meant to be quite wet so don’t worry they will turn out great once cooked.
  2. Heat the oil in a non-stick frying pan, then fry the burgers for 4-5 minutes on each side, turning until crisp and cooked through.
  3. Cook rice according to packet instructions.
  4. Divide salad and rice between 2 plates, place the salmon burgers on top of the rice and serve with the lemon wedges.
